Healthy Living

- No drinking 30 minutes before or after meals. This is so important to keep you full, allow you to get the nutrients you need from your food, and helps with the weight loss process
- Follow the guidelines of taking your vitamins. They are so important to keep you healthy and strong.
- Exercise as soon as possible after surgery. Start walking — this aides in your weight loss and also helps you to regain your strength.
- Remember at all meals to have “Protein First”. Find a few different liquid proteins you love before surgery. I continue to do protein drinks to keep my protein intake up; the program recommends at least 60 grams a day, but I kept mine as high as 100 grams a day to help with hair loss and weight loss. I started protein drinks along with sensible meals one month before surgery, and this helped with a faster recovery.
- Find a support system. I attended the Bariatric Support Group here at Ochsner every third Tuesday of the month, and I went online to bariatriceating.com to join groups and get myself educated on what to expect, what worked for others, and learn to make educated decisions for myself in my postoperative period.
- Find sugar-free products that you can enjoy. I have found lots of wonderful products that I can use in my cooking. Most of my sugar-free products I have found are at bariatriceating.com.
This is a life-changing surgery and in order to be successful, you will need to make changes. I still do not eat, rice, pasta, potatoes or bread. I have learned that some carbohydrates are not my friend. This is my choice. I eat good carbohydrates for myself only after I fill up on protein.
I really just cook like I use to, just lower fat, and modify what I eat. See my recipes for stuffed peppers, cheeseburger pie and Waldorf chicken salad. I find things when I go out and basically my husband calls me a cheap date now because sometimes, I eat a little of the appetizer the family orders and then I will have some of his or my son’s steak.
I enjoy a great meal and conversation with my family all in my size 4 jeans! The secret to meat is that is needs to be moist for you to be able to eat it. Here are some meals I enjoy with my family:
- Roast beef stuffed with garlic and with gravy. They eat rice with the gravy, I slice off some of the roast with gravy on top with a little veggie on the side.
- Meatballs and spaghetti. I eat the meatballs and gravy, with some veggies.
- Stuffed bell pepper. I have included my recipe and the entire family enjoys them. This can also be modified with shrimp.
- I love the recipe for cheeseburger pie. This recipe we use to make with a pie crust, but now I make it without the crust and it is delicious.
- Smothered round steak and chicken. Again, I eat the meat and gravy
- Gumbo, I eat everything but the rice.
- I bake country style ribs in the oven with salt and pepper, covered with aluminum foil for about 4 hours at a very low heat. When they are falling apart, and I add sugar-free barbecue sauce. This is delicious.
- Mexican chicken fajitas with sour cream, guacamole, cheese etc. No tortilla, just enjoy the fixings!!
- Chili
- Crab cakes are wonderful!
- Boiled seafood is great for bariatric patients.
- Egg, tuna, chicken or shrimp salad are easy lunches.

Debone a rotisserie chicken and chop up the meat into small chunks
1/2 cup pecans - chopped
1/2 cup walnuts - chopped
1/2 cup lite mayo
1/2 cup lite sour cream
1 cup green grapes, sliced in half
salt and pepper to taste
Mix everything together and let sit in the refrigerator for awhile before serving. You could also add sliced apples if you like. This makes a very good amount and lasted me almost a week of lunches, with me giving some out to others to try!!
6 bell peppers, whole
1 pound extra lean ground beef, salt and pepper to taste
1 purple onion chopped
1 bell pepper chopped
1/2 red bell pepper chopped
3 cups low fat mozzarella cheese
1 cup Barilla (has a low sugar count) spaghetti sauce
Italian bread crumbs
Clean bell peppers and slice a nice large opening in them. Cook in the microwave for about 3 - 4 minutes, set aside. Spray the pan with Pam and brown ground meat in a pan, and drain off all excess fat when it is done. Set meat on the side and brown all the onions and bell pepper. When the seasoning is limp, add back in the ground meat and season with salt and pepper. Add in the Barilla sauce and the mozzarella cheese, mix well! I cut my bell peppers in half and lay them down in a glass baking dish that has been sprayed with Pam. Stuff the meat mixture into the bell peppers and top with a touch of Italian breadcrumbs. Cover with aluminum foil and bake in the oven at 350 degrees for 30 minutes, uncover and bake for an additional 20-30 minutes. Enjoy, they are wonderful and very moist!!
Vegetable Oil Cooking Spray
1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon olive oil
1/2 teaspoon oregano
1 teaspoon taco seasoning
3/4 teaspoon salt
1/4 teaspoon fresh black pepper
1/3 cup Italian bread crumbs
One 8-ounce can tomato sauce
Preheat oven to 350 degrees. Coat a deep dish pie plate with vegetable cooking spray and set aside. Over medium-high heat, brown ground beef (with olive oil) and onion and peppers. Drain off any fat from the meat. Stir in oregano, taco seasoning, salt, black pepper, bread crumbs, and tomato sauce. Pour into the greased pie plate. Set aside.
CHEESE TOPPING
1 egg, beaten
1/4 cup low fat milk
1/2 teaspoon salt
1/2 teaspoon dry mustard powder
1/2 teaspoon Worcestershire sauce
2 cups shredded cheddar cheese (or any variety you like)
In a small bowl mix together the egg, milk, salt, mustard powder, Worcestershire sauce, and cheese. Pour over the burger mixture, spreading cheese to cover top completely. Bake for 30 minutes or until topping is set and golden.
