Emma Poling, RD, LDN

Eat Fit NOLA Dietitian

Emma Poling is the Eat Fit NOLA Operations and Marketing Dietitian. After graduating from Louisiana State University with a Bachelor’s of Science in Nutrition and Dietetics, she returned home to New Orleans to attend the Tulane Dietetic Internship. A New Orleans native, she knows how important food is to our culture and lifestyle - everything we do revolves around food. As such, her primary motivation is helping people to foster balance and enjoyment in their lives as it relates to nutrition and their health. With a background in counseling bariatric and renal populations, she understands the effects of the role that diet plays in disease prevention and management. Emma also has 6 years of experience in the service industry, and loves connecting and building relationships with our restaurant partners. When she is not working with Eat Fit you can find her working out in City Park, cooking or enjoying a dinner out, and attending as many festivals in New Orleans as she can.

Erin Arceneaux is the Eat Fit Program and Events Coordinator. She is a graduate of Southeastern Louisiana University with a Bachelor of Science in Family and Consumer Sciences with a Concentration in Nutrition. A native of Empire, Louisiana, Erin grew up hunting and fishing and enjoys anything outdoors, traveling, playing guitar, and spending time with her twins Caleb and Lily.

Molly Kimball is a registered dietitian and nutrition journalist with a passion to make it easy for people to live their strongest, healthiest lives. As a lifestyle dietitian and founder of Ochsner’s Eat Fit nonprofit restaurant initiative, Molly has managed the nutrition program at Ochsner Fitness Center in New Orleans for over 20 years, working with thousands of clients, ranging from people like you and me to professional athletes. Through it all, she learned what drives us and motivates us, what works and what doesn’t, and what derails even our best intentions. Having the ability to dial into these behaviors and challenges has fueled and inspired Molly’s entire professional career. As a regular contributor to national and local publications, Molly covers all things related to nutrition and wellness. She has been a columnist for the Times-Picayune | New Orleans Advocate since 2006 and has been the nutrition expert for New Orleans’ ABC affiliate WGNO since 2009, with weekly TV segments on WGNO’s Good Morning New Orleans, "Get FUELED with Molly." She also hosts a weekly podcast , FUELED wellness + nutrition with Molly Kimball, where she addresses the latest health trends and interviews some of the country’s leading experts.
